Ingredients

Four tilapia filets
1 lemon, preferably organic
Salt and pepper
About 4 chives for garnish
Preparation

Preheat oven to 375 F.
Zest lemon. Try to take the zest only from one half since you’ll be using the other half as garnish.
Cut lemon in half and squeeze the the juice from the half with the zest removed. Cut other half into 8 slices.
Place tilapia in baking dish. Pour lemon juice over it. Sprinkle with lemon zest, then place two lemon slices on each tilapia filet. Sprinkle with salt and freshly ground black pepper.
Bake tilapia until done, about 10 minutes. You should be able to just separate it with a fork.
Garnish with very finely sliced chives.
Serves 4
