Ingredients:

  • 4 large courgettes (Zucchini)
  • 2 egg yolks beaten
  • 3 slices of bacon chopped into small pieces or use pancetta
  • 1/4 cup coconut milk
  • pinch of black pepper
  • chopped parsley
  • pinch of salt

Directions:

  1. Slice each courgette lenghtwise as thinly as possible.
  2. Whisk egg yolks, coconut and seasoning.
  3. Saute courgettes in coconut oil until just lightly brown & soft, cook bacon in a separate pan until crispy, spoon into a bowl with the egg mixture then drizzle on top of courgettes, stir & gently warm through, remove from heat before it resembles scrambled eggs!!
  4. Garnish with parsley.
