Ingredients:
- 4 large courgettes (Zucchini)
- 2 egg yolks beaten
- 3 slices of bacon chopped into small pieces or use pancetta
- 1/4 cup coconut milk
- pinch of black pepper
- chopped parsley
- pinch of salt
Directions:
- Slice each courgette lenghtwise as thinly as possible.
- Whisk egg yolks, coconut and seasoning.
- Saute courgettes in coconut oil until just lightly brown & soft, cook bacon in a separate pan until crispy, spoon into a bowl with the egg mixture then drizzle on top of courgettes, stir & gently warm through, remove from heat before it resembles scrambled eggs!!
- Garnish with parsley.
